CLEAN PLATE Calamari, Artichoke & Greens Meal

What you’ll get:

• one bag OSM Greens Blend
• one pound frozen calamari
• one can artichokes
• one onion
• one bulb garlic
• one lemon

What you’ll do:

• Defrost calamari (we put under running cold water for about 10 min)
• Put greens into individual serving bowls, sprinkle with a bit of olive oil and work through with fork to tenderize/start to wilt, set aside
• coarsely chop one bulb garlic, one can artichokes and onion and sauté in olive oil until nearly done (medium heat about 10-15 min)
• add calamari and continue to sauté another five minutes or so (calamari will be done when tentacle pieces have curled up and look a but crispy, tube pieces are no longer translucent, but solid white instead)
• Spoon calamari mixture over greens, give a splash of fresh lemon juice and salt to taste

We got about four servings from this, but you could also make the meal a bit heftier with pasta or rice.
